Summertime, Turning Towards Fall

It is the third week early summer into my first Community Supported Agriculture (CSA) membership and it feels like the box is completely filled with only crookneck squash and zucchini. My children are young, six-and-a-half, and they cannot take another dinner with the two vegetables served sautéed with onions. Neither can I.

That was fifteen years ago and my children are now into their twenty-first year and my cooking has changed for the better: more variety in how I cook all the local produce that is so abundant in the summer in Tennessee.

Wanting to spend more time outside with the lengthy days and less time in the kitchen heat, many of the meals that I prepare require very little time and no oven. Using zucchini and not much else, a gazpacho and a side dish or appetizer can be made in as little as 15 minutes.


For the gazpacho, a cold soup, place water, white wine or champagne vinegar, garlic, cucumber and zucchini in a blender and puree until smooth. Refrigerate until ready to serve. This is a good dish to make with produce that might not look so pretty anymore so food does not get wasted, which means money, time and other environmental resources are not wasted as well.

Zucchini carpaccio is a simple side dish or appetizer that looks elegant and takes very little time to prepare. Using a mandolin or sharp knife, slice the zucchini into thin rounds and place on a platter with each round slightly overlapping. Squeeze some fresh lemon juice & a drizzle of olive oil, a grating of fresh parmesan cheese with a sprinkle of salt and fresh ground pepper – and Done!


It is now September, and while the weather has teased us with some cooler days, we are still in the midst of summer's foods. Visiting Delvin Farms at the East Nashville Farmers' Market, there were tomatoes, zucchini and yellow squash, alongside okra and eggplant. And while the promise of Fall is approaching, enjoy the bounty of summer summertime simple meals while the produce is still available.
